In the Spring of 1973, when the Garbage Project studies of household refuse were first beginning, there was a nationwide "beef shortage" -- beef was had to find and very expensive. Imagine then the surprise of the student sorters when they found whole steaks and other large chunks of beef thrown out uneaten!
