Preheat the oven to 350 degrees.
Place the flour, salt, sugar and cold butter in a food processor with the metal blade. Mix until the butter looks like pea sized spheres. Gradually, add very cold water (it should take between 2 to 4 tbsp.), until the dough forms a ball. Kneed a little by hand and line a baking dish with the dough. Refrigerate until the filling is done.
Sautee the sliced onions in the melted butter with the oil. Cover and saute for another 20 minutes on low heat. Stir occasionally. In a bowl, mix the eggs, heavy cream, shredded cheese and salt (if using Parmesan, which is not recommended, then donít add salt). When the onions are done, add them to the egg mixture and mix well. Pour the filling onto the dough and bake in a pre-heated oven for about 30 minutes until the top is golden and when inserting a knife in the filling, it comes out clean. Let stand for about 10 minutes until it sets.
