Orange and Arugula Salad

Servings: Serves 6.



Combine first 4 ingredients for dressing.

Peel oranges and cut each crosswise into 6 slices. Either arrange the lettuce and oranges on individual plates and add 1 tbsp feta to each and drizzle the dressing on each salad, or put the oranges on the bottom of the bowl and add the lettuce, feta and dressing.

Toss and serve immediately. Add more honey or olive oil to the dressing if it seems too tart.
